Don’t gasp, but I fell in love with guacamole this year. Yes, 2015. I know, I know. Whatever you are going to say, I’ve already heard it. I was just never into the taste. It was always something so off about the taste to me. And I would try it time and time again at various restaurants trying to find the guacamole that would change my mind. But to no avail. Le sigh. Then one day, the spark awakened in me as I dipped my chip into the guacamole at Gracias Madre. Eureka! I instantly fell in love.
Of course, I took to Pinterest pinning the most delicious looking guacamole recipes I could find. And currently, I’m in love with the Roasted-Chili Mango Guacamole by Contentedness Cooking. I’ve made this recipe countless times and it is always a hit.
Dicing the mango is the most time consuming part. Make sure it is not too ripe, otherwise it will be mush in your guac — and you don’t want mush, you want fresh and distinct. The ingredient list calls for a hot chili, I like to go with jalapeños, as they are my favorite! And lastly, I’ve noticed that for my liking, the ingredients tend to be about double what you need for two medium avocados, so I like to save half of the chopped ingredients to make more guacamole later in the week. You can easily tweak this recipe to your own liking.
Ingredients:
- 2 ripe avocado
- 1 onion finely chopped
- 1 large hand of cilantro coarsely chopped
- 1 large mango
- 1 hot chili
- 1-2 tomatoes, diced
- 1 Tbs extra virgin olive oil
- 1 Tbs apple cider vinegar
- 2 Tbs lemon juice
- salt, pepper to taste
- 1-2 cloves garlic, optional
