Here is another edition of Pinterest to Plate! Lately, I have been so so busy, but as you know I always keep it healthy, simple and quick when it comes to my weekly meals and snacks. And Chia pudding is a great way to satisfy your sweet tooth plus it is good for you and literally, too easy to make. Guys, don’t be afraid of the Chia seed. It won’t bite.
There are many benefits to these superpower seeds, as they are loaded with antioxidants, a high quality source of protein, and are high in Omega-3s.
I have played around with various Chia seed pudding recipes, and so far this is one of my favorites. I realized that I must add fruit to my pudding to really get full enjoyment out of it, as sometimes the coconut can be overwhelming. Another thing I love about this pudding is that you can add different ingredients to the base of coconut milk, sweetener and Chia seeds: like cocoa powder or peanut butter for a rich, scrumptious flavor.
INGREDIENTS
- 1 cup coconut milk
- 2 tablespoons agave or honey
- 2 tablespoons Chia seeds
- 1 cup fresh raspberries

Looks good. I love the idea of mixing in peanut butter or cocoa. But, if the coconut can get overwhelming, have you thought about trying almond milk, soy, or daily milk?
Coconut milk from the can gives it the perfect pudding consistency and other types of milks just don’t do the job. I want to do more research because there has to be some alternatives! 🙂

I’ve never tried a Chia seed pudding but this looks really interesting. I have used chia seeds before but I usually just add them to my granola or throw them in a smoothie.
