Gosh. It feels amazing to actually sit down and write.  I apologize for my absence, I’ve missed you all so much!  Work has been insane on top of preparing for a third move.  The first move involved roaches, which lead to a second move in under 24 hours.  And we have finally found our perfect place.  On top of that craziness, there’s been 30th birthdays and other events.  So you can imagine, the last thing I wanted to do was pick up my laptop.  But I’m finally back and super excited for what’s to come in all areas of my life right now, and even more excited to decorate our new fancy place and document it all right here.

Now on to the No Bake Energy Bites.  I have been making these for months now.  It is the perfect snack that really takes 10 minutes to make, is filling and CAN be good for you.  There are many variations you can do with this recipe, so get as creative as you want.  For example, I only had cheapy white chocolate chips instead of dark chocolate chips or cacao nibs, which are my favorite.  Also, I only use half the chocolate chips or nibs the recipe calls for.  You can also make bars instead of balls, which take less time, but I particularly like the balls.

I also wanted to show you my favorite brand of chia seed, coconut and ground flax seed, because if you’re not one to buy this stuff, it’s hard to know what you are looking for or what is really good.  I like to order from Amazon.

Now, all you do is combine the ingredients, cover and let it chill in the fridge for 30 minutes. Next, take them out and roll them into balls.  It makes around 20 to 25, and they keep for about a week.  Remember, keep them refrigerated at all times.  If the balls are not in the fridge for a while, they will crumble, and nobody wants that.

INGREDIENTS:

  • 1 cup (dry) oatmeal (I used old-fashioned oats)
  • 2/3 cup toasted coconut flakes
  • 1/2 cup peanut butter
  • 1/2 cup ground flax seed
  • 1/2 cup semisweet chocolate chips (or vegan chocolate chips)
  • 1/3 cup honey or agave nectar
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon vanilla extract

    I make a version you bake and it has banana’s and oats and then mix-ins. I will have to try this one.
